Instructions
  1. In a pan, heat olive oil. Dice the onion and fry it.
  2. Add the garlic and keep frying.
  3. On a grater, peel away the squash, celery, and the carrot; add the vegetables to the pan and keep steaming everything for 5 minutes.
  4. In a bowl, mix the eggs, starch, salt and pepper, and the herbs. Add the vegetables and the SkinnyRice and stir into a mash.
  5. In a pan heat up some olive oil and with ladle, create a small pancake in the pan; fry each side of the pancake for 3 minutes
